Another quick and
simple breakfast recipe; this combination is perfect. The creamy cool avocado,
the salty bacon and the sweet zing of the balsamic vinegar makes for a light
but flavoursome brunch or breakfast, that is going to kick that sometimes
inescapable bacon craving. This could also make an awesome topping for a salad
if you chopped the avocado and layered over some lettuce and tomato.
Ingredients:
One avocado
Two rashers of bacon
One garlic clove
minced
Three tablespoons of
butter
One tsp of balsamic
vinegar
(Makes one portion)
Method:
1) Begin to grill
your bacon.
2) While the bacon is
grilling, halve your avocado and remove the stone.
3) In a pan melt your
butter, garlic and balsamic together until you have a thin sauce. Do not let
the sauce boil.
4) Once your bacon is
done, chop it into small pieces and place into the holes in the avocado. Top
with your drizzle and serve.
