If,
like me, you always wanted to emulate that scene in the children’s classic film
Matilda, in which she makes the most delicious-looking American style pancakes,
you will be relieved to know that perhaps the easiest recipe ever has surfaced,
and it’s healthy to boot. Unfortunately,
unlike the movie, I can’t teach you how to make these sweet morning treats WITH
YOUR MIND but hopefully you will feel satisfied none–the-less when you have
impressed your friends with a stack of steaming pancakes.
This
recipe is gluten-free and packed full of protein, giving you a quick and nutritious
brunch that will prepare you for the day and keep you feeling perky until
dinner.
Ingredients:
2 medium sized eggs
A dash of cinnamon powder
to taste
(this is an option. You could add any flavouring you like; vanilla or even
crushed hazel nuts or chocolate chips)
Coconut oil for cooking
You will need:
A large frying pan
Blender optional
Method:
1)
Crack your eggs and break up your banana into your blender
and blitz until smooth. If you don’t have a blender you can mash up your banana
and egg mixture with a fork.
2)
Sprinkle in your cinnamon or any other flavourings and set
the mixture aside.
3)
Set your hob to a medium heat and melt your coconut oil in a
large frying pan.
4)
Pour your mixture into the pan. You can pretty much make your
pancakes any size you like. I usually go for about a three-inch circumference.
5)
Fry the pancakes until the mixture is bubbling in the middle
(about 2-3 minutes), then flip.
6)
Stack them, serve them, enjoy!
